White Peony Herbal Tea

What is White Peony Tea:
White peony is a white tea made from the Chinese Camellia sinensis tea plant. Other names for White Peony tea include Bai Mu Dan or Pai Mu Tan. It is said to be one of the most popular white teas around the world. White Peony is made from one bud and one or two leaves and includes whole branches and stalks. Tea leaves are harvested in spring, and both buds and some leaves will be covered with fine white hair. 
Although this tea is named White Peony, it doesn’t contain any peony flowers, although the flowers are white. There is debate on how the White Peony received its name. While some suggest it’s because of its delicacy and sophistication, others think it’s the appearance of the leaves, and some even say the tea has a light peony aroma. 

Taste:
White Peony has a very elegant, mellow, and extremely beautiful taste. Expect light sweetness, full mouthfeel, refreshing, light melon and dried hay flavor, and hints of floral and baked notes. White Peony has no bitterness. It’s one of those teas you should always make from loose leaves rather than tea dust. This tea has a sweet and fresh aroma with green notes and hints of Rose, Jasmine, and Minty Spearmint.
White Tea: White tea is the least processed of the tea types. It’s only slightly oxidized, and most of its natural freshness and nutrients are preserved. Tea leaves are only withered and dried.  

History and Origin of White Tea and Peony Tea:
It is said that White Peony originated from Fuding in the Chinese Fujian Province in the 1870s. This province is important because it is the origin of all white tea, where it is still produced. However, the popularity of White Peony Tea increased so much in the 1920s that they started cultivating it in other areas of China to keep up with the demand. 
For many years it was believed that white tea was discovered during the Song Dynasty (920-1269). However, even earlier references to white tea have been traced as far back as the Tang Dynasty (618-907).

Brew Instructions:

Add 1 teaspoon of tea to a cloth tea bag or mesh basket and place in your favorite mug. Pour 8 ounces of boiling water ( 190-194*F) over the tea and steep for 2-5 minutes or until desired strength is reached. Sweeten as desired. Some prefer honey, while others prefer sugar. Apprentice number 2, who compounded this tea and came up with the recipe, said that she preferred sugar to honey as a sweetener. For a teapot, try 1 tbl.
